"Great Sizziling Summer Recipe "

Flag Cake

Celebrate your next Fourth of July with a bang!

Ingredients

  • Butter
  • Flour
  • One package (2 layer size) white cake mix (plus ingredients to make the cake --- listed on the box)
  • One package (4 serving size) gelatin (e.g., JELL-O), any red flavor
  • 1 cup boiling water
  • 1/2 cup cold water
  • 3 1/2 cups (8 ounce container) whipped topping (e.g., Cool Whip), thawed
  • 1 pint strawberries, washed and sliced
  • 1 cup blueberries, washed
  • 1 cup miniature marshmallows
  • 13 x 9-inch baking pan
  • Two-pronged carving fork
  • Medium mixing bowl
  • Measuring cups
  • Rubber scraper or large spoon
  • Large tray or cutting board (this must be larger than the baking pan)
  • Table knife
  • Aluminum foil and star-shaped stickers (optional)

Cooking Instructions

  1. Grease the 13 x 9-inch pan with butter and dust lightly with flour. Prepare and cook cake mix according to package directions. Cool cake for fifteen minutes.
  2. Use the two-pronged carving fork to make holes in the cake about every 1/2 inch.
  3. Pour gelatin into the mixing bowl. Add the cup of boiling water and use the scraper to thoroughly mix it until the gelatin is completely dissolved. Use the measuring cup to scoop out the gelatin and pour it over the cake. (It will run down into the holes, making the cake have vertical, red stripes that will be visible when you cut into the cake.)
  4. Put the cake into the refrigerator and let it chill for 3 to 4 hours.
  5. Use this time to cover your serving tray with aluminum foil. (Note: Do this only if you wish to decorate the sides of it after the cake is placed on the tray, or you can skip this step.)
  6. To loosen the cake from the pan, put about one inch of warm water in the kitchen sink. Take pan out of refrigerator and dip just the bottom (don't let the water come up over the sides) into the water for 10 seconds. (Note: Don't do this too long, or your cake will get soggy. If that happens, just put it in the fridge again until it firms up again.)
  7. Now put the large tray on top of the cake and hold on tightly! An adult needs to help with this part. Turn the cake over so that the tray is on bottom and the pan is on top. Take the pan off. The cake should be resting on the tray. If it isn't, you may want to put the bottom of the cake pan in the warm water again for a few seconds to loosen the cake a bit more.
  8. Frost the sides and top with whipped topping. Arrange the strawberries, blueberries, and marshmallows on the cake so that it looks like a flag. (You should have rows of red and white stripes, and the blue square of blueberries in the upper left-hand corner.)
  9. Serve immediately, or put cake into the refrigerator until you are ready to serve it!

4th of July Celebrations and Fireworks

It's the way we celebrate Independence Day. Boom, pop, crackle. Ooohs. Aaahs. Here is where you will find the fireworks displays taking place across the state on and around the 4th of July, 2010!

Sunday, July 4


Center Harbor: dusk, over Center Harbor Bay.

Concord: dusk, Memorial Field. $2 donation collected at gate. There will be vendors and live music beginning at 5:30 p.m. Rain date, July 25.

Franconia: 9:15 p.m., Dow Field

Hampton Beach: 9:30 p.m., a spectacular shoot!


Hopkinton: The Recreation Department is hosting a Fourth of July celebration from 12:30 p.m. to 3:30 p.m. in Houston Park. Activities include a 5K fun run from the American Legion lot at 9 a.m., a kid's parade starting at 11:30 a.m., and the main parade starting at noon. "Johnny the K" family entertainer will be here with his hundreds of hats, as well as balloon animals, face painting, dunking booth, kids games, pie eating contest, lots of great food and much more. The "Tooky Cookie Bakeoff" will be back so get your secret recipe out!

Laconia: 9:30 p.m., downtown, fireworks from the upper level of the parking garage.

Meredith: dusk, over Meredith Bay

Meredith: Rubber Duckie Race at the Inns at Mill Falls, 4 p.m. Come enjoy the acoustic music group Amy Gallatin and Stillwaters, 7 p.m.

Wolfeboro: 9:30 p.m., fireworks at dusk over Wolfeboro Bay. Rain date: July 5.
